Abundance of Strawberries

Recipe

Mix the ice cream powder neutral 10030 with the whole milk to a homogeneous mass. Add the ice cream paste. Stir briefly to obtain a smooth mass. Leave to rest for at least 4 hours. (Leave to rest for minimum 12 hours for optimal taste.)
Scoop the pasto strawberry through it and re-mix well before putting in the batch freezer.
Take the desired shape and place a thin layer of sponge cake at the bottom. Spoon the sundae strawberry in the middle. Make sure the strawberries stay nicely in the middle, this gives a better result.
Fill the shape completely with the strawberry ice cream. Finish on top with a layer of sundae strawberry puree. Put everything in the freezer and leave to stiffen.
Take the strawberry hearts out of the freezer 10 minutes before you need them and place them in the middle of the plate. You can best take the hearts out of the mould with a warm knife. Finish the plates at will with fresh strawberries, fresh raspberries and the sundae strawberry puree.
