Creme Brulée with spiced biscuit

Recipe

Pour the cream and the milk in a cooking pot.
Add the vanillaseeds.
Heat on a medium fire. Stir regularly with a wisk. Do not let it boil!
Wisk the egg yolks with the sugar. Mix everything carefully but not until it is pale and frothy.
Add the hot milk/cream to the egg yolks while stirring. Add the compound spiced biscuit.
Leave to rest until the foam has vanished. (about 20 til 30 minutes)
Preheat the oven at 90°C.
Fill the small oven dishes and bake in the oven for at least 1 hour at 90°C.
Let the oven dishes cool down completely.
Just before serving, sprinkle a layer of brown sugar on the crème brûlée and burn until it is nicely caramelized.
Finish if desired with crumble of spiced biscuits.
