Cheesecake with passion fruit and spiced biscuit

Recipe

Finely chop the spiced biscuit in a food processor.
Melt the butter in a pan. When the butter is melted, add the spiced biscuit and mix well.
Take a round spring form with a diameter of 12 cm. Attach some baking paper to the bottom and then grease everything with butter.
Pour in the spiced biscuit and press well with a spoon. Then place the baking tin in the refrigerator.
Put the ricotta, cream, powdered sugar, egg yolk and lemon juice in a bowl. Mix everything well with a whisk.
Soak the gelatin leaves for a few minutes in a small bowl with cold water. Make sure the gelatin is completely in the water. Take a pan with 3 tbsp of water and put on a low heat. When the water boils, squeeze out the gelatin and place them in the pan. Stir well. When the gelatin is completely dissolved, pour this into the ricotta mixture.
Remove the baking tin from the refrigerator and fill with the ricotta mixture. Then put in the fridge for about 4 hours so that it can set. Then finish with the topping passion fruit.

5 tbsp powdered sugar
2 tbsp lemon juice
1 egg yolk
3 sheets of gelatin
